The Tajine

What is the Tajine. The Tajine is a conical casserole which has been used in Morocco for centuries to cook traditional recipes very slowly, using meat, fish, various vegetables and marvellous spices.

The name Tajine indicates dishes cooked in the steam that develops under the lid during cooking.
