Chicken Tajine with grapes

Recipe for 4 people

Preparation time: 15 mins

Cooking time over a low heat or if braised in the oven at 160°C: 30 mins

 

Ingridients:

  • 1,5kg chicken
  • 500gr fresh grapes
  • 500gr fresh grapes to extract the juice
  • 250gr cherry tomatoes
  • 6 to 8 shallots
  • ½ teaspoon of turmeric
  • Freshly ground pepper
  • ½ level teaspoon of fine salt
  • 5 cl olive oil
  • A few leaves of fresh coriander

Method:

  1. Cut the chicken into 4 pieces – 2 breasts and 2 legs. Not the carcass which can be used to make broth or soup.
  2.  Place the Chasseur® Tajine dish over a moderate heat with half the olive oil. Brown the seasoned chicken in the Tajine dish.
  3. Peel the shallots, put them whole with the chicken and sprinkle with turmeric.
  4. Braise for 20 mins. over a low heat with the Chasseur® Tajine lid on.
  5. Add the cherry tomatoes and half the grapes, then put the remaining grapes in a clean teatowel and squeeze to extract the juice over the chicken: simmer over a low heat for 10 mins.
  6. Check the seasoning and pour the remaining olive oil over the dish. Sprinkle with coriander or parsley leaves.

Place in the centre of the table and serve with some good bread and a green salad !
