Rolled omelette with parsley

Serves 4
Ingridients
- 2 garlic cloves
- 6 eggs
- 1 large bunch of fresh parsley
- 60g parmesan
- 5 tablespoons olive oil + a dash for frying
- Salt and pepper
Instructions
- Peel and slice the garlic cloves.
- Wash the parsley and dry using a clean cloth. Remove the leaves from the stems and chop. Grate the parmesan.
- In a large bowl, combine the garlic, parsley and the grated parmesan. Pour in the olive oil. Season with some salt and pepper. Mix and set aside.
- In a large bowl, beat the 6 eggs. Season with salt and pepper beforehand.
- In a frypan, heat a dash of olive oil. Spread the egg mixture around the frypan. Leave to cook for about 3 minutes
- Flip it over gently using a large plate and then cook the other side for about 2 minutes.
- Slide the omelette onto a dish. Sprinkle the parsley evenly over the omelette and then roll the omelette to make a sausage shape.
Cut into slices using a knife and serve!
